Caramelized Banana Oatmeal
Warm cinnamon oats get a golden crown of buttery pan-browned banana slices.

Let’s make something lovely.
The photograph pairs a bowl of oats with browned banana rounds in a skillet. This version brings the two together for a breakfast with soft oats and a warm, caramel-like topping.
Let the banana slices sit undisturbed long enough to color before turning them. They are delicate once warm, so a thin spatula helps keep the rounds intact.

Let’s do this
- 1
Cook the oats
Combine the oats, milk, water, ¼ teaspoon cinnamon and salt in a saucepan. Bring to a gentle simmer, then cook over medium-low heat for 6–8 minutes, stirring often, until the oats are tender and creamy.
- 2
Slice the bananas
While the oats cook, cut the bananas into rounds about ½ inch (1 cm) thick.
- 3
Brown the topping
Melt the butter in a nonstick skillet over medium heat. Add the banana rounds in a single layer and cook undisturbed for 2 minutes. Turn gently, sprinkle with the brown sugar and remaining ¼ teaspoon cinnamon, and cook for another 1–2 minutes until golden and syrupy. Reduce the heat if the sugar darkens quickly.
- 4
Serve
Divide the oats between two bowls and spoon the warm bananas and pan syrup over the top. Serve immediately.
Milk, Oats. Check every ingredient and substitute for your own needs.
Before the happy first bite.
Firm yellow bananas keep their shape better than very soft, heavily spotted ones.
Keep the oats at a gentle simmer so the milk does not scorch.
The bananas brown best when they have space in the pan.
Cool leftovers promptly, cover and refrigerate at 40°F (4°C) or colder within 2 hours for up to 3 days. Reheat the oats thoroughly with a splash of milk or water. The banana topping is best freshly made but may be refrigerated with the oats.
