    Heat the oven to 425°F. Toss pepper and mushrooms with oil on a baking sheet and roast for 6 minutes.

    Mix crushed tomatoes, oregano, and garlic powder in a small bowl. Place pitas on a second baking sheet.

    Spread each pita with half the tomato mixture, leaving a narrow border. Add mozzarella and the partly roasted vegetables.

    Bake for 7–8 minutes until cheese melts and the edges turn crisp. Check early because thin pitas brown quickly.
