Crunchy Black Bean Tacos
Crisp taco shells hold warm spiced beans, guacamole, lettuce, cheese, and a cool spoonful of sour cream.

Crunchy tacos make it easy to layer warm and cold textures in the same bite. A lightly mashed bean filling stays inside the shell more readily than loose beans, while lettuce and guacamole keep the top fresh.
The photographed filling is hidden, so black beans are the proposed base here. Set out the toppings before warming the shells, then assemble just before eating to preserve the crunch.

Cook the filling
Heat the oil in a skillet over medium heat. Cook the onion for 4–5 minutes until softened. Add the garlic, cumin, and paprika and stir for 30 seconds.

Add and mash the beans
Stir in the beans, water, and 1/2 teaspoon salt. Cook for 5–6 minutes, stirring, until hot. Mash roughly one-third of the beans with a fork or potato masher to make a cohesive filling. Stir in the tablespoon of lime juice.

Prepare the topping
Mash the avocado with the 2 teaspoons lime juice and 1/8 teaspoon salt. Put the guacamole, dry shredded lettuce, cheese, and sour cream within reach.

Warm the shells
Warm the ready-made shells according to their package directions. If the package allows oven heating, arrange them on a baking sheet and heat at 325°F/165°C for about 3–5 minutes, watching closely.

Fill and serve
Divide the warm beans among the shells. Add lettuce, guacamole, cheese, and sour cream. Serve immediately.

Keep the filling thick enough that it does not drip through the shells.
Dry the lettuce and assemble at the last minute for the best crunch.
Refrigerate the beans and perishable toppings separately within 2 hours. Use the beans within 3–4 days and the prepared guacamole within 24 hours for best quality. Reheat beans to 165°F/74°C and fill fresh warmed shells; assembled tacos do not store well.
