    Beat eggs with water and pepper. Heat oil in a nonstick skillet over medium heat.

    Cook the diced pepper for 4–5 minutes until tender. Stir in beans, cumin, and paprika; heat for 2 minutes.

    Move the bean mixture to one side of the pan. Add eggs to the other side and scramble for about 2–3 minutes until fully set; the egg mixture should reach 160°F. Fold everything together.

    Warm tortillas until flexible. Divide filling between them, then add avocado and salsa.

    Fold in the sides and roll tightly. For a toasted finish, cook seam-side down in the dry skillet for about 1 minute.
